Super Bowl Snack: Spinach Artichoke Dip

So you all know that the Super Bowl is coming up on Sunday. Y’all… I love Super Bowl Sunday’s or just football watch parties in general! I enjoy watching football just fine (especially if  my team is playing), but really, I’m there for the snacks. I’m like a goat, I could just graze on snacks all day every day! And my go-to snack recipe for every function is always this crockpot spinach artichoke dip, because it is seriously the bomb dot com.

Ask my family and friends what dish I always bring to parties, Thanksgiving, Christmas Eve, watch parties, Bachelor Mondays, etc. They will all say the warm spinach artichoke dip! And that’s because it is 1.) super easy to make, 2.) super easy to eat and snack on, and 3.) it is always a crowd favorite. I’ve never brought home a crockpot full of this stuff, I’m pretty sure people lick the bowl clean…

This spinach artichoke dip really just requires some chopping, some mixing and then some melting in a crock pot for 2-3 hours. There’s no cooking required or blending or baking… And there’s no special eating requirements either. Just grab a chip or a cracker and dig in! Most of the time, I don’t even bother to put this or the chips/crackers into a cute serving dish either. I just plug in the crockpot and lay the bags of chips out, they’ll be gone soon enough anyways. Ha!

What you’ll need:

  • 1 small-medium white onion
  • 6oz bag of baby spinach
  • 14oz can artichoke hearts, drained
  • 4 cloves of garlic
  • 8oz block reduced fat cream cheese, softened
  • 6oz plain greek yogurt (I buy a single cup)
  • 8oz bag shredded mozzarella cheese
  • 8oz bag grated or shredded parmesan cheese
  • Salt & pepper
  • Pita chips, crackers, tortilla chips to serve (my FAVORITE is the Roasted Garlic Triscuits!!)
  • A crockpot/slow cooker

How to make:

1. Start by finely chopping the onion. Chop up the baby spinach as best as you can, you don’t want whole spinach leaves in there. Mince the garlic. And chop up the artichoke hearts as best as you can. Add it all into a large mixing bowl.

2. Add in the softened (which just means to let it sit out of the fridge for 20-30 minutes so it’s squishy) cream cheese, the plain greek yogurt, and half of each bag of cheese. Sprinkle in some salt and pepper.

3. Stir all of the ingredients together. This is going to use some arm strength!!! Then spray the crockpot with cooking spray.

4. Set the crockpot to high and cook for 2-3 hours. Or if you have other things to take care of, set it to low and cook for 5-6 hours.

5. Add the mixture to the crockpot and sprinkle the remaining cheese over the top. Be sure that you stir it around every so often so that the outsides don’t burn and everything gets nice and melted together!

6. When it’s warm/hot, everything is melted, and the spinach leaves have turned dark green, it is ready to eat! Plug the crockpot in at the party and lay out some chips or crackers and wait for it to be devoured!

I brought this over to my boyfriend’s mom’s house warming party this weekend and I felt bad for the other food because my spinach artichoke dip was the life of the party. His family are all really good cooks, but they were all raving about my spinach artichoke dip. When we were leaving the party they wouldn’t let us take the crockpot back home because there was still some spinach artichoke dip left and five people were standing around it!! Haha!

I don’t know what it is about this dip but it’s just so addictive, plus the ingredients are relatively healthy. Maybe because it’s warm cheese and garlic maybe?! Probably… warm cheese with garlic is the best!
